Clos Sauvage is an organic winery in Southern Burgundy (Leynes). Located on 4 hectares in Beaujolais Villages, Saint-Amour, Saint-Véran, and Bourgogne Blanc, we produce organic red, white, and sparkling wines. Anecdotes from the estate: Why Clos Sauvage? When we arrived, the old vines of the Clos were abandoned, in a wild state... Today, we are working to tame them across 4 hectares. At the same time, we are gradually replanting on small plots to best express the specific characteristics of our "climats" in our wines. And our logo? Two plane trees standing in the middle of our courtyard have naturally joined by a common branch. Our deep connection to the place, the sincere encounter with a terroir and its winemakers, the unity of our family... Quite a symbol! The Story of the Estate: Both originally from Northern France, and not from winemaking families, we lived for several years in Toulouse, where David learned the trade and earned his oenology degree. After a year of traveling through the vineyards of France, we were fortunate enough to find a place that matched our aspirations, on the border of Burgundy and Beaujolais. We are perched atop a hill at an altitude of 450 meters, with a breathtaking view of the Saône Valley. The Clos is surrounded by chestnut forests, dry stone walls, natural springs, and heathland. We enjoy this preserved place in the heart of nature, which is perfectly suited to organic farming. This former estate had been organic for 15 years but had been abandoned for several years. We restructured the vineyards around the house (uprooting a large portion) and are gradually replanting Gamay, and perhaps other grape varieties in the future. Through a series of encounters, we found a plot of Saint Amour, then Bourgogne Blanc, and finally a small piece of Saint Véran (to be planted). A new chapter is being written at Clos Sauvage, and we are delighted to be a part of it. The pride of the estate: Our young family settled in Leynes in 2019, on the border of Beaujolais and Burgundy. We took over 4 hectares of forgotten vineyards, surrounded by dry stone walls and forests at an altitude of 450 meters. Our vines are all on hillsides: Gamay on granite soils for our Beaujolais-Leynes and Saint Amour appellations, and Chardonnay on clay-limestone soils for our Bourgogne Blanc and Saint Véran. We cultivate and vinify organically.
