Our opinion on the cuvée
This wine displays a light ruby color and reveals red fruit aromas on the nose. On the palate, it is supple from the outset, offering a pleasant texture. Perfect for pairing with grilled dishes, poultry, red meats, and even desserts, it can be enjoyed now but has an interesting aging potential of 3 to 5 years.
Located in Mercurey, about thirty kilometers from Beaune, Domaine de Cardon is rooted in an ancient history, revitalized since 2013. The estate is now managed by an association of enthusiasts who sought to breathe new life into the Cardon family's lands, relying on a precise understanding of the terroirs of the Côte Chalonnaise.
The vineyard spans approximately 15 hectares, primarily distributed across the Mercurey and Mercurey Premier Cru appellations, featuring a typical Burgundian grape varietal mix: Pinot Noir, Chardonnay, and Aligoté. The plots predominantly rest on clay-limestone soils, characteristic of the region, which promote structured balances and a clear expression of the grape varieties.
