Baguette had just opened in 2024 when Vincent reached out to us. The objective: to build a coherent wine list from the outset, with a selection that reflects his vision and descriptions clear enough for his customers to navigate independently.
Together, we re-evaluated the structure of the list, the wine references, and the by-the-glass offering: from accessible entry-level options to more ambitious cuvées to support an upscale progression. Since then, by-the-glass sales have significantly increased. The result: a clear and readable wine list, aligned with both the establishment's identity and its business objectives.

Suzume is a gourmet inn nestled in the Nice hinterland. Philippe founded the establishment, now joined by his son Théo. Their ambition: a wine list that matches the quality of their cuisine, featuring prestigious appellations offered at accessible prices.
