In Saint-Étienne-des-Ouillères, in the heart of the Beaujolais region, Domaine Dufaitre is first and foremost a human adventure driven by a complementary duo. Since 2006, Laurence and Rémi have been cultivating their vineyards organically in Saint-Étienne-des-Ouillères and the surrounding vineyards, with undiminished energy and a shared passion for lively wine. Rémi, a perfectionist and tireless worker, lives and breathes wine day and night, always in search of the perfect touch. Laurence, just as dedicated, embodies the rigor and consistency of patient work, carried out with humility and perseverance. Together, they are building their estate step by step, naturally dividing roles and evolving their practices. Recent years have marked a new phase with the arrival of new plows to refine soil work and the construction of a winery in 2020, one that is more functional and true to their vision. The estate has grown around vineyards acquired as early as 2006 in Brouilly and neighboring crus. Winemaking follows the pure Beaujolais tradition, using carbonic maceration, with aging methods tailored to each cuvée. Depending on the vintage, a very small amount of sulfur may be added at bottling, always in moderation, to preserve the balance and character of the wines.
