Our opinion on the cuvée
This Chinon presents a ruby color with violet reflections. On the nose, it reveals aromas of slightly smoky black fruits, adding a touch of indulgence. On the palate, the texture is supple and juicy, with a subtle acidity that awakens the taste buds. Crunchy tannins give way to peppery notes on the finish. Perfect for an aperitif or a charcuterie and cheese board.
Domaine du Saut au Loup is, above all, the unique journey of Éric Santier, a globetrotting native of Chinon who returned to his roots. After years spent in wine export and promotion, first in France and then in Dubai, he decided, in his forties, to change his life and become a winemaker. This thoroughly considered career change was nurtured by training in Bordeaux and several experiences at other estates.
Taking over the estate marked a dual return to his origins for him. A return to Chinon, his hometown, after living in Burgundy, the Var, and Paris. Also, a return to fundamental values: respect for the land, for living organisms, and for the long term. For Éric, the profession of winemaker is a comprehensive one, blending vineyard work, winemaking, knowledge transfer, and human connection.
