Our opinion on the cuvée
This sparkling wine has a pale yellow color and fine bubbles that tickle the palate. The nose reveals notes of green apple, while the effervescence carries light, fresh aromas. On the palate, a light acidity blends with flavors of lime and citrus, offering a refreshing and invigorating experience. Perfect for a light and refreshing aperitif.
Located in the heart of the Saumur appellation, Domaine du Moulin de l'Horizon spans approximately 30 hectares, situated around the Moulin de l'Horizon hill, one of the highest points in the Saumur region at approximately 110 meters above sea level. This topographical position partially protects the vineyard from westerly winds and contributes to a favorable microclimate for consistent grape ripening.
The vineyard lies on clay-limestone and tuffeau soils, which are capable of retaining winter rainfall and ensuring a gradual water supply throughout the growing season. This geological context contributes to the production of wines with supple balance and clear fruit expression. The grape varietal composition is dominated by Cabernet Franc (approximately 50%), complemented by Chenin Blanc (30%) and Chardonnay (20%), allowing for the production of wines in all three colors.
