Our opinion on the cuvée
This wine charms from the very first whiff with its intense aromas of delicately candied apple and quince. On the palate, it’s an explosion of sensations: the wine’s fullness blends with an airy texture and lingering freshness. The texture on the palate offers a delicate, rich mouthfeel that will awaken your taste buds, accentuated by elegant acidity and subtle effervescence. The finish prolongs the pleasure by blending notes of warm apple, lemon curd, and a salty/chalky touch that evokes noble, spicy bitters.
Located in Saint-Bris-le-Vineux, at the heart of the Auxerrois vineyard, Domaine Grivot-Goisot is part of an ancient winemaking history, attested in this area since the 15th century. The estate, as it exists today, truly took shape after the Second World War, before being passed down from generation to generation within the Goisot family. In 2020, Anaëlle Goisot and René Grivot took over the family operation, ensuring its continuity.
The vineyard spans approximately 26 hectares, distributed across several emblematic appellations in northern Burgundy: Saint-Bris, Chablis, Chablis Premier Cru, Bourgogne Côte d’Auxerre, and Bourgogne Aligoté. Saint-Bris represents a regional singularity, as it is the only Burgundy appellation authorizing Sauvignon, cultivated here on Kimmeridgian limestone soils, similar to those of Chablis.
Vineyard management is based on sustainable viticulture, with particular attention paid to soil preservation and yield management
