Our opinion on the cuvée
This AOP Minervois wine displays a dark and brilliant color that catches the eye. On the nose, delicate notes of balsamic and red fruits emerge. On the palate, its creaminess and concentration are appreciated, offering a pleasant sensory experience. Ideal for accompanying roasted or grilled white or red meats, this wine will enhance your dishes, whether traditional or contemporary. To be enjoyed between 14 and 15°C to appreciate all its subtleties.
Located in Caunes-Minervois, at the foot of the Montagne Noire, Domaine Ampelous was taken over by Pascal, a native of Burgundy with thirty years of experience in the region. Surrounded by 20 hectares of vines, green oak forests, and garrigue, the vineyard primarily rests on clay-limestone soils with a high stone content, mixing schist, marble, and pebbles. From his arrival, viticultural practices have focused on mechanical and manual methods that respect biodiversity. Controlled yields and the exposure of the plots promote concentrated and expressive grapes. Each grape variety and each plot are vinified and aged separately to better understand their identity before blending. This parcel-by-parcel approach gives rise to powerful, fruity wines that are true to their terroir.
