Barbara and Pierre, passionate about winemaking, founded Domaine SIBILLE, a 15-hectare organic vineyard in the Minervois region. Using a variety of grape varieties such as Viognier, Syrah, and Grenache, they produce authentic and distinctive wines that reflect the region’s expressive terroir. The sandstone soil imparts freshness and structure, while hand-harvesting and aging on full lees result in rich, deep wines. Discover their wine “Les jardins d’Eole,” which won a silver medal at the Grands Vins du Languedoc competition, and let yourself be captivated by their colorful array of labels reflecting their connection to the terroir.

Our opinion on the cuvée
This wine has a beautiful pale yellow color with green highlights. The nose reveals intense notes of fresh fruit. On the palate, the attack is fresh and balanced, with a pleasant finish. Perfect with fish, hard cheeses, shellfish, or dishes featuring goat cheese and basil. Serve at 8°C to fully appreciate its flavors.
