Barbara and Pierre, passionate about winemaking, founded Domaine SIBILLE, a 15-hectare organic vineyard in the Minervois region. Using a variety of grape varieties such as Viognier, Syrah, and Grenache, they produce authentic and distinctive wines that reflect the region’s expressive terroir. The sandstone soil imparts freshness and structure, while hand-harvesting and aging on full lees result in rich, deep wines. Domaine Sibille was established in December 2015, when Barbara and Pierre left their native Alsace to settle in Laure-Minervois, at the foot of the Minervois hills. The estate, managed organically, spans just over 15 hectares, including 5 ha under AOP Minervois and 10 ha under IGP. Surrounded by garrigue and pine forests, the vines primarily rest on sandstone soils, bringing freshness and structure to the wines, while Viognier and Chardonnay are planted on clay-limestone soils. Pierre, an oenologist for over twenty years, crafts authentic cuvées by favoring manual harvesting for reds, gravity-flow winemaking, sulfite reduction, and aging on lees for whites. The estate cultivates varietals such as Grenache, Carignan, Syrah, Mourvèdre, Viognier, and Chardonnay. True to its philosophy of sharing, Domaine Sibille was also conceived as a place for exchange and hospitality, open to the distinctive landscapes of the Minervois.
