Our opinion on the cuvée
The Chardonnay from northern Burgundy reveals itself in this wine through aromas of white flowers and a subtle minerality. On the palate, the attack is generous, fruity, and fleshy, evolving into a rich and balanced texture. A tangy freshness brings lightness and elegance to this Premier Cru, making it perfect for pairing with seafood or grilled andouillette.
Located in the heart of the Chablis region, the Domaine du Château de Fleys is a family-owned estate whose roots date back to the late 19th century. It was a lumberjack from the Morvan region—Julien Philippon—who, upon settling in Fleys, planted the first vines that still make up nearly the entire estate today. A story of terroir, determination, and tradition.
On 30 hectares, Béatrice, Benoît, and Olivier Philippon carry on this tradition, each bringing their own contemporary sensibility to the winemaking process. The wines, crafted to emphasize roundness rather than sharp minerality, offer an approachable and full-bodied Chablis, produced entirely from grapes grown on their own vineyard—no grapes are purchased from outside sources.
