Cahors
The reputation of wines from the Cahors appellation in the Southwest region stems primarily from its red wines, which feature a deep ruby color with violet hues, aromas of black cherry, blackcurrant, and blackberry, and powerful tannins. They make excellent wines for aging but can also be enjoyed young. To produce this licorice-colored red wine, winemakers use the Malbec grape variety as a single varietal or, at times, blended with Tannat or Merlot. This wine from the Southwest pairs perfectly with regional dishes such as cassoulet, duck breast, duck confit, or truffle-based dishes. These wines have excellent aging potential, thanks to the finesse they acquire as they mature. In recent years, winemakers have been exploring new ways to utilize this limestone terroir to produce white wines from grape varieties such as Viognier, Chenin, and even Chardonnay. This white wine from the Lot Valley is flavorful and rich. Be sure to try it as soon as possible!
