Our opinion on the vintage
This Chinon boasts a ruby robe with violet highlights. On the nose, aromas of slightly smoky black fruit reveal a touch of sweetness. On the palate, the texture is supple and juicy, with a light acidity that awakens the taste buds. Crisp tannins give way to peppery notes on the finish. Perfect to accompany an aperitif or a charcuterie and cheese platter.
Domaine du Saut au Loup is above all the unique journey of Éric Santier, a globetrotting Chinon native who returned to his roots. After years spent in wine export and promotion, first in France and then in Dubai, he decided, in his forties, to change his life and become a winemaker. This was a carefully considered career change, fueled by training in Bordeaux and several experiences at other estates.
Taking over the estate marked a double return to his roots for him. A return to Chinon, his hometown, after having lived in Burgundy, the Var, and Paris. And also a return to fundamental values: respect for the land, for living things, and for the long term. For Éric, the profession of winemaker is a comprehensive one, combining vineyard work, winemaking, knowledge transfer, and human connection.
