Domaine du Pavillon
Located on the hillsides of the Crozes-Hermitage appellation, Domaine du Pavillon spans approximately 14 hectares of vines, cultivated on well-exposed slopes on the left bank of the Rhône. This area benefits from a distinct northern Rhône climate, conducive to gradual ripening and the preservation of freshness, particularly for Syrah.
Before being dedicated to viticulture, the site housed a family farm surrounded by orchards. In the 1960s, fruit trees gradually gave way to vine plantings, while the agricultural buildings were converted into a barrel cellar. The domain takes its name from the old hunting lodge overlooking the hillsides, which has become an emblematic landmark of the area.
Today, the vineyard is managed by the Audibert family, with particular attention paid to the old Syrah vines, the estate's central grape variety. The soils and topography allow for the production of grapes that are both ripe and structured, without excessive heaviness. The estate primarily produces two cuvées: a red made from Syrah and a white, in a style faithful to the identity of Crozes-Hermitage.
In the cellar, winemaking favors a classic and controlled approach, with measured extractions and barrel aging designed to structure the wines without masking the fruit. The reds exhibit a generous texture, present but integrated tannins, and an aromatic profile marked by dark fruits and the spicy notes typical of northern Syrah. The white offers a fuller profile, supported by a balancing freshness.
Domaine du Pavillon thus offers a traditional and coherent interpretation of Crozes-Hermitage, rooted in the family history of the estate and in respect for the terroir's balance. These structured and expressive wines are crafted for the table and for aging, remaining true to the spirit of the great wines of the northern Rhône Valley.
