The Chemins de Carabote estate was established in 2006 by taking over vineyards that had originally been destined for the cooperative. Initially, there were approximately 6 hectares of vines planted with Syrah, Grenache, and Carignan on rounded pebble soils, which contribute to the grapes’ aromatic richness. The estate required significant work to restructure the vineyards, including pruning and trellising, as well as the construction of a gravity-fed cellar made of Gard stone to ensure precise control over the winemaking process.

The two managers then decided to settle in the area near **Saint-André-de-Sangonis**, west of Montpellier, after managing the estate remotely from Paris. The vineyard’s location, at the foot of Mont Saint-Baudille near the Séranne massif, offers a varied climate with hot, dry summers and cold winters, which enhances the wines’ complexity. The estate later expanded, adding 4 additional hectares in the Terrasses du Larzac appellation.

Les Chemins de Carabote is now committed to organic farming and produces wines made from traditional Languedoc grape varieties, reflecting the power, complexity, and character of the Mediterranean terroir, composed of pebbles and schist.
