Solstice is a tart and fruity non-alcoholic beer (less than 0.4%) with a raspberry flavor. Brewers call this style a “sour”: it’s closer to cider than to a traditional beer. It often appeals to people who think they don’t like beer. Brewed in Rambouillet without removing the alcohol afterward, it retains a genuine beer flavor.

Pink Sun Brewing was founded in 2023 through a partnership between Albin, a passionate brewer, and the founders of Brasserie Barge in Rambouillet. Their beers are brewed alcohol-free from the start, using yeasts that naturally limit fermentation, and are then filtered and pasteurized to ensure stability.

A genuine non-alcoholic craft beer for the menu: perfect for guests who don’t drink alcohol, at lunch, and during Dry January. Serve well chilled.

Pink Sun Brewing: The Alcohol-Free Craft Beer

Pink Sun Brewing was founded in 2023 following a meeting between Albin, a passionate brewer, and the founders of Brasserie Barge in Rambouillet (Yvelines). Their observation was simple: the craft beer industry still lacked a genuine non-alcoholic option, and mass-produced non-alcoholic beers lacked character.

What sets them apart is their method. The beers are never de-alcoholized: they are brewed without alcohol from the start, using yeasts that naturally limit fermentation. The result retains the body and aromas of a craft beer, with less than 0. 4% alcohol. All the beers are filtered, pasteurized , and tested in a laboratory, which ensures their excellent stability.

The lineup includes three styles: Mirage, a Citra-hopped pale ale; Green Ray, a bitter and aromatic West Coast IPA; and Solstice, a raspberry sour . It offers a genuine non-alcoholic alternative on the menu that meets the same high standards as the rest of the beverages.
