Our opinion on the cuvée
This wine has a subtle and delicate aroma, with notes of almonds and apricots that gradually unfold. On the palate, the texture is soft and brioche-like, creating a very pleasant, creamy sensation. Citrus notes then enliven the whole, adding acidity that perfectly balances the flavors. A delicate wine, ideal for pairing with dishes such as sushi, cod fillet, or fresh cheese.
In Languedoc, the Aubert & Mathieu project is led by Jean-Charles and Anthony, with the objective of offering accessible, clear wines that align with current consumption trends. Their work is based on selecting grapes from various sectors of Languedoc, chosen for their ability to produce balanced and expressive profiles.
The cuvées prioritize expressions centered on fruit, freshness, and drinkability, with vinifications conducted to preserve aromatic clarity and supple structures. Extractions remain moderate, and aging is adapted to each wine without seeking overt oak influence, in order to maintain direct and approachable profiles.
The project is part of a committed approach, featuring certified organic wines and a focus on production conditions. Aubert & Mathieu also advocates for a holistic reflection on environmental impact and model consistency, notably materialized by B Corp certification.
