Extractions remain moderate, and aging is adapted to each wine without seeking overt oak influence, in order to maintain direct and approachable profiles.

The project is part of a committed approach, featuring certified organic wines and a focus on production conditions. Aubert & Mathieu also advocates for a holistic reflection on environmental impact and model consistency, notably materialized by B Corp certification.
