Château Guilhem
Located in Malviès, between Limoux and Carcassonne, Château Guilhem has been a family estate since 1878, now managed by the fifth generation. The estate spans approximately 35 hectares of organically farmed vineyards, clustered around the property and nestled against the Malepère massif, in western Languedoc.
This area distinctly differs from the rest of the region due to its cooler climatic influence, linked to the proximity of the Pyrenees. This characteristic is reflected in the estate's grape varietal composition, intentionally featuring Atlantic-inspired grapes: Merlot, Cabernets, and Malbec. This choice gives the wines a unique profile within the Languedoc landscape, often described as 'another Languedoc,' where freshness and structure take precedence over solar richness.
The soils play a central role in the balance of the wines. The Malepère massif takes its name from a friable rock, poor in construction suitability but particularly well-suited for vines. These soils retain water in winter and gradually release it during summer, limiting water stress and promoting consistent grape ripening. This natural reserve helps preserve aromatic freshness and the finesse of the wines' balance, even in warm vintages.
In the cellar, winemaking aims for clarity and frankness of expression. Extractions are carefully controlled to preserve supple tannins and an elegant structure, while aging is designed to complement the wine without masking the terroir's identity. The wines are characterized by structured yet approachable profiles, driven by clean fruit and excellent persistence on the palate.
Château Guilhem thus stands out as a distinctive estate in Languedoc, offering a precise and coherent interpretation of the Malepère terroir. It is a family estate that asserts a unique identity, founded on freshness, balance, and a steadfast commitment to its natural environment.
