South of Auxerre lies a unique wine-growing region: only white wines are produced there, and Saint-Bris is mentioned in Latin writings as early as 280... Even today, you can still savor this marvel, which nearly disappeared due to downy mildew in 1910. Covering just 103 hectares, it is one of the five appellations of the Auxerre wine region. The primary grape variety is Sauvignon Blanc, unlike its Burgundian cousins, which are made from Chardonnay. It has a pale color; on the nose, there are very mineral aromas—sometimes quite pronounced—and in some exceptional wines, you can detect fruit notes such as citrus or raspberry. On the palate, Saint-Bris is very lively, and thanks to the Sauvignon Blanc grape, it develops a certain smoothness with age. It can be cellared for up to 6 years before drinking.
