Baguette had just opened in 2024 when Vincent contacted us. The objective: to build a coherent wine list from the outset, with a selection that reflected his personality and descriptions clear enough for his customers to navigate on their own.
We collaboratively rethought the structure of the list, the references, and the by-the-glass offering: from accessible entry-level options to some more ambitious vintages to accompany the upmarket progression. Since then, by-the-glass sales have significantly increased. Result: a clear menu, aligned with both the venue's identity and its objectives.
A gourmet mountain inn
Suzume
Suzume is a gourmet inn nestled in the Nice hinterland. Philippe created the place, now joined by his son Théo. Their ambition: a wine list that lives up to their cuisine, with excellent appellations offered at affordable prices.
Accompanied by Jean from the beginning, they have built a coherent selection: Southern wines, rooted in their specificities, open to great appellations like Châteauneuf or Pommard. The wine list is popular and fully contributes to the reputation the establishment is building.
