Domaine du Salut

Domaine du Salut

South West

Located on the Cérons plateau, in the historical heart of Graves, Domaine du Salut has been managed by Aurélia and Frédéric since 2015. The vineyard lies on highly permeable sandy-gravelly soils, originating from an ancient tributary bed of the Garonne, with a sub-layer rich in nutrients and naturally high biological activity.

Upon their arrival, the couple initiated a structured environmental approach. The white grape parcels are cover-cropped (oats, vetch, clover) to enrich the soil with organic matter and promote natural nitrogen input, contributing to the aromatic development of the grapes. No herbicides are used; soil cultivation prioritizes traditional mechanical practices, adapted to the specific nature of each parcel. The estate has been Terra Vitis certified since 2015 and converted to organic farming starting in 2020.

Harvests are predominantly mechanical, with the exception of sweet wine cuvées, which are hand-picked to ensure precise grape selection. Viticultural choices aim for optimal ripeness and a direct expression of the fruit, without seeking excessive concentration. Vineyard management is part of a coherent approach that aligns agricultural practices, living environment, and the desired wine style.

In the cellar, winemaking processes are designed to preserve the clarity and drinkability of the wines. Extractions are kept moderate, and aging is subtle, to maintain approachable and balanced profiles. The wines prioritize aromatic honesty, a supple structure, and a clean finish, within a deliberately simple and digestible style.

Domaine du Salut thus offers a contemporary interpretation of Graves wines, breaking away from certain traditional Bordeaux codes. The cuvées provide a direct expression of the Cérons terroir, focused on immediate pleasure and sharing, while being based on serious and consistent viticultural choices. A discreet yet distinctive address, embracing an uninhibited approach to wine without compromising on quality or environmental respect.
