Limoux
It is in the Aude department that this distinctive appellation produces still wines known for their effervescence: Crémant, Blanquette de Limoux, or Vin de Limoux—the selection is vast! Across 1,400 hectares of clay and limestone soil, the climate is unique. The influence of the Mediterranean is limited by natural barriers to the east, while the oceanic climate from the west has only a slight impact. Blanquette de Limoux and Crémant de Limoux are made from Mauzac grapes; the region’s typical grape varieties are Chardonnay and Chenin. Still red wines are primarily made from Merlot, with dominant aromas of prunes.
