This wine has a subtle and delicate nose, with notes of almonds and apricots that gradually unfold. On the palate, the texture is soft and brioche-like, providing a very pleasant, smooth sensation. In Languedoc, the Aubert & Mathieu project is led by Jean-Charles and Anthony, with the aim of offering accessible, understandable wines that align with current consumption trends. Their work is based on selecting grapes from different areas of Languedoc, chosen for their ability to produce balanced and expressive profiles.

The wines prioritize fruit, freshness, and drinkability, with winemaking techniques designed to preserve aromatic clarity and supple structures. Extractions remain moderate, and aging is tailored to each wine, without aiming for overt oak influence, in order to maintain straightforward and approachable profiles.

The project is part of a committed approach, with organically certified wines and attention paid to production conditions. Aubert & Mathieu also advocates for a holistic reflection on environmental impact and model consistency, notably demonstrated by B Corp certification.
