Our opinion on the cuvée
This wine displays a clear, pale yellow hue. The nose reveals distinct floral and fruity notes. On the palate, it is straightforward, offering a beautiful balance between richness and liveliness. It pairs perfectly with jambon persillé, rillettes, or even Burgundy snails. Serve chilled as an aperitif or to accompany white meat.
Located in Saint-Bris-le-Vineux, at the heart of the Auxerrois vineyard, Domaine Grivot-Goisot is part of an ancient winemaking history, attested in this area since the 15th century. The estate, as it exists today, truly took shape after the Second World War, before being passed down from generation to generation within the Goisot family. In 2020, Anaëlle Goisot and René Grivot took over the family operation, ensuring its continuity.
The vineyard spans approximately 26 hectares, distributed across several emblematic appellations in northern Burgundy: Saint-Bris, Chablis, Chablis Premier Cru, Bourgogne Côte d’Auxerre, and Bourgogne Aligoté. Saint-Bris represents a regional singularity, as it is the only Burgundy appellation authorizing Sauvignon, cultivated here on Kimmeridgian limestone soils, similar to those of Chablis.
