This wine has a delicate nose, blending aromas of exotic fruits with subtle woody notes. On the palate, it surprises with its freshness and minerality, accompanied by a lovely acidity. A luscious and precise wine that will appeal to lovers of fine wines. Enjoy it with avocados stuffed with shrimp, red mullet fillet à la provençale, or asparagus risotto.
Located in the Cabardès appellation area, about ten kilometers west of Carcassonne, Maison Ventenac is a family estate nestled at the foothills of the Montagne Noire. The vineyard covers approximately 135 hectares and is currently undergoing organic conversion, with particular attention paid to soil management and the environment.
Taken over by Olivier and Stéphanie Ventenac, the estate strives to bring forth a clear and direct interpretation of the Cabardès grapes, a transitional territory between Atlantic and Mediterranean influences. Winemaking aims to limit artificial intervention, favoring precise aging tailored to the profiles of the cuvées. Depending on the wines, containers vary between vats, large capacity foudres, and amphorae, in order to adjust textures without masking the fruit's expression.
